The major inland crags are:
Destel, Cimai, Baou, Faron and Coudon with several smaller crags also detailed in the guidebooks. Whilst I've not climbed extensively in the region and have not visited all crags, each of those that I have been to have a good variety of grades and styles and there is plenty to accommodate a wide range of abilities.
There is superb sea cliff climbing in les Calanques situated between Cassis and Marseille. I'd advise carrying a set of wires on the classic multi-pitch routes as the bolting may at times feel a little run out, particularly if you are climbing close to your grade. Note that that this area is closed during the summer months and in high winds due to the increased risk of fire.
The Destel provides at great first day climbing for those new to the area and keen to get a good day in without the hassle of spending ages finding and getting to the crag. It's very close to La Daby and really easy to get to, situated between Ste Anne d'Evenos and Ollioules. It has several sectors on both sides of the gorge so you should find some shade throughout most of the day. There's a wide variety of grades and both single an multi pitch options. Many of the multi pitch routes can be done as first pitch only.

A good source of information is the Cosirock site:
http://www.cosiroc.org Scroll down the left had side an click on information for Toulon and the Calanque.
Inland Toulon Region has two volumes:
Escalade autour de Toulon - Tome 1 Covering Faron, Destel and Cimai as well as Jaume, Gros cerveau and Cride
Escalade autour de Toulon -Tome 2 Covering Coudon and Baou as well as Coupatier, Ragas, Touravelle, Tourris and Fenouillet
Both these are readily available at the Decathlon in Toulon.
This did not appear to be on sale at Decathlon was I was last there. I'm sure if you looked in Cassis or Marseille it would be easy to find.
Warning: As always car crime is an issue follow the advise on the cosirock website and in the guidebooks. Leave nothing in your car, open the glove box and take the parcel shelf of the boot.
The Calanque are particularly problematic due to their proximity to Marseille You can park at a number of car parks situated off the coast road between Cassis and Marseille. Alternatively you can park in Cassis and walk or take a boat taxi to the Eastern venues or in park Marseille itself and walk or take a bus out to the Western Calanques.
